I’ve been promising several people I’d post this recipe, and time got away from me.  Now here it is, a couple days before the big day.  However, it’s really easy, so if you still need one more dessert, try this.  This is a guaranteed crowd please, and it is super simple.  Even better, it’s a chilled dessert.  And there aren’t many of those at Thanksgiving.

1 box strawberry cake mix

1 small box strawberry jello

1 pkg. frozen strawberries, almost completely thawed

1 small box INSTANT vanilla pudding

1 med. container Cool Whip

cold milk


Bake cake according to package directions in 9 x 13 pan.  Allow cake to cool completely in pan.

In small bowl, add 1 cup boiling water to jello mix.  Dissolve completely.

Put thawed berries in mixing bowl and add gelatin mixture.  Mix gently.  Pour strawberry gelatin mixture over cooled cake.

In large mixing bowl, combine pudding mix with one cup cold milk.  Beat to blend.  Add in container of Cool Whip and beat until mixed completely and smooth.

Spread whipped cream mixture over cake and strawberries.  Cover and chill 6-8 hours or overnight.

Cut into squares to serve.
